People We Love: Nicky Laceby
Great British Bake Off contestant Nicki Laceby (Series 14, 2023) has been baking her way through shows and charity events ever since. We met her at the Good Food Show in June 2024 and asked if she’d bake Lola’s grandma’s olive oil cake. She said yes, and added her own twist with a cream cheese icing.
“Your grandma’s recipe is divine. I’ve baked it many times now and it’s always a hit. It is the most delicious cake, so light and flavoursome thanks to the olive oil and lemon zest within the cake batter. Sometimes I swap lemon for orange and top it with crystallised rose petals.”
Nicki also uses Two&One olive oils regularly in her everyday cooking. “When I make my tomato sauce for pasta dishes I always put a few glugs in just before I blitz. It really lifts the flavour. It’s perfect drizzled over soup, in salads, or simply alongside homemade bread… delicious.”
