Pruning
As the year begins, our olive harvest has just come to a close, and we’re now bottling the freshest oil to bring to the UK for your enjoyment. In early January, Lola joined her cousin Alberto, our orchard manager, and la cuadrilla, the loyal team who return each year to help with the harvest, to celebrate the season’s end in Spain.
Pruning has already begun, a gentle reminder that our care for the trees never stops. In the past, the branches were burned in great bonfires among the groves — a memory Lola treasures from childhood — but today they’re mulched to nourish the soil. The thicker branches are still set aside for winter fires, and the spirit of those bonfires lives on at Candle Mass, where townsfolk gather to roast potatoes and drizzle them with salt, pepper, and the newly pressed olive oil.
