
Chilli & Garlic King Prawns
This tapa brings me back to my childhood: it was served in “El Bar de Manolo”, where I would go with my parents on special festivities. This bar and his owner are long gone, but the memory and his recipe remains and is always a winner when friends come for dinner or tapas.
It is very easy to prepare with good quality ingredients.
Ingredients
250g raw king prawns
3 or 4 garlic cloves
2 or 3 whole dried cayenne peppers
Plenty of Negra Harvest Olive Oil
Salt
Takes 10 mins – serves 4 as a tapa, 2 as a main
Method
Cover the bottom of a shallow pan with plenty Negra Harvest olive oil, add it generously as this will be the sauce. Add the finely sliced or chopped garlic, and the chillies, and cook over a medium heat, watching constantly. As soon as you notice the garlic starts to brown around the edges, add the raw king prawns. Season with salt, and stir the prawns until they are cooked through. Once they are all bright white and red, they are ready. I suggest discarding the chillies before serving, as it can be a surprise if someone eats a whole chilli unexpectedly!
Tips:
These are delicious served with crusty bread as a tapa, or even with tagliatelle as a main course.
