Hummus and crudités platter
Having grown up with chorizo and chick pea stew every other week, it was amazing to discover that the humble chick peas could be turned into delicious party food. Homemade hummus is the best, but even a bought tub can be transformed when adding a sprinkle of sea salt flakes and a generous drizzle of Verde olive oil.
Ingredients
400g can chickpeas, drained (liquid
reserved)
1 small garlic clove
1 tsp lemon juice
3 tbsp Envero olive oil
1 tsp paprika
Verde olive oil to drizzle
Sea salt flakes
Takes 10 mins – serves 4 to 6
Method
Add the chickpeas, garlic, lemon juice, paprika and Envero olive oil into a small food processor with 2tbl of the reserved liquid from the can of chickpeas.
Blend all the ingredients until smooth. Tip the hummus into a bowl and chill until ready to serve.
Just before serving, sprinkle the sea salt flakes and drizzle generously with Verde olive oil.
Serve with a selection of your favourite vegetables or breads.
