
Padrón peppers with sea salt flakes and olive oil
I am delighted to be able to find these tasty, fresh and bright green peppers in British stores, as they used to be available in Spain during the summer months only. Now, they are even grown in the Isle of Wight!
Ingredients
130-150g Padrón peppers
1 tbsp Negra extra virgin olive oil
1 tbsp Verde extra virgin olive oil (optional)
Flakes of sea salt
Takes 5 to 7 mins – serves 2
Method
Wash and pat dry the peppers. Add the Negra olive oil into a frying pan and heat it up to medium high. Add the peppers, leave them for a minute or two, then toss them round, until they are a little bit charred.
Just before taking them out, add a good sprinkle of sea salt flakes and I like adding a good drizzle of Verde olive oil at this point too.
Serve with some crusty bread (delicious when dipped in the salty olive oil after all the peppers have gone!)
